Carne Guisada

We decided to have a good old home-cooked roast and vegetables for Sunday dinner today. It was delicious, and we had a good bit of it left. But after such a wonderful meal for lunch, I didn't want to do mere leftovers for supper. I had a craving for something spicy. So, I decided to try and cook a dish I love dearly but have never made for myself -- carne guisada. Carne guisada is a Mexican beef-tip stew that is amazingly delicious and deceptively simple. Here's my recipe:

CARNE GUISADA
2-3 cups beef stock, strained
Chili powder
1 small can tomato sauce
1 1/2 - 2 pounds roast, pre-cooked and cubed
1 - 2 tablespoons flour
salt

flour tortillas
pico de gallo
pepper-jack cheese, shredded

Bring the stock to a simmer over medium-high in a large, deep skillet. Stir in the chili powder -- don't be shy, it will take 2-3 tablespoons, depending on your taste. But don't over-do it, the mix will get spicier the longer it simmers. Next, add the tomato sauce. Pre-mix the flour with a little water, then slowly add to the liquid and stir until it reaches the consistency of a thin- to medium-consistency gravy. Reduce heat to medium-low. Finally, add the beef cubes and salt to taste. Cover and let simmer for a while, long enough for the flavors to come together. Serve on a flour tortilla sprinkled with a little of the shredded cheese and pico de gallo.
